Introduction

Rosmarinic acid is extracted from rosemary (Rosmarinus Officinalis L.), a common household plant that has grown in the Alps since the Middle Ages, is now found throughout the world. Rosemary has been used for thousands of years as a savory spice, food preservative, in cosmetics and hair products, and as an herbal extract for a variety of health disorders. However, the exact chemical pathways involved in its beneficial effects have remained unknown until recently. Rosmarinic acid is considered to be a natural, efficient, stable with high temperature durability, secure, non-toxic without side effects, water-soluble antioxidant and a green food additive. Research has also shown rosemary acid has a strong effect to remove free radicals in the body. Rosemary extract has a longer life span of antioxidant activity. It also contains more than two dozen antioxidants, such as carnosic acid, one of the only antioxidants that deactivates free radicals through a multi-level cascade approach.
